Made with the Pink, our Prosecco DOC Rosé, also Brut: a faint blush and a red‑berry edge. Lovely with prawns laid on top. With the Gold, it’s brighter and more lemony.

Tap each step as you go.

Buon appetito.

Why a cold splash at the end?

The wine that cooks with the rice gives it depth. A splash of cold Prosecco stirred in at the end brings back what the heat takes away: the green apple, the lift, the freshness.

Which Prosecco for risotto?

A dry one. Extra Dry, despite its name, is the sweeter style2, and a risotto made with it tastes faintly of dessert. Bella Principessa is Brut, so the rice stays savoury and bright.

The Story

The rice that waits
for no one.

Twenty minutes of your full attention.

That’s the price of a risotto, and it’s why people love it. You can’t walk away. Somebody pours you a glass, leans on the counter, and the best conversation of the evening happens over a wooden spoon.

The rice of the north.

Carnaroli, the rice risotto cooks prize most, grows in the paddies around Pavia, Novara and Vercelli1. Arborio is easier to find and works well.

Your turn.

Open a cold bottle of Bella Principessa. A glass for the rice, a splash for the finish, and the rest for whoever is keeping you company at the stove.

From the kitchen
“Whenever there’s Prosecco open, I cook with it. Bella Principessa, ti amo! We love cooking with Prosecco.”
Bucci, our friend at Frantoio, 397 King’s Road, Chelsea. He cooks with it at Frantoio when a dish calls for it, and at home when he’s cooking for himself.

Cold stock

Every cold ladle stops the cooking. Keep it at a simmer.

Rinsed rice

You’d wash away the starch that makes it creamy.

Extra Dry Prosecco

The sweeter style, reduced, tastes of dessert.

Cooking it stiff

Take it off the heat while it still flows. It sets as it rests.

Buon appetito.

Variations

Same pan,
another night.

✻With prawnsSeared in butter and laid on top at the end.
●SpringAsparagus tips and peas for the last 5 minutes.
♡Rosé risottoPour the Pink: a faint blush and a berry edge.
÷2For twoHalve it all. The rest of the bottle still goes to the table.

Risotto questions.

Can you make risotto with Prosecco instead of white wine?

Yes. Prosecco is a dry white wine with bubbles, and the bubbles cook off in seconds. A Brut gives the same savoury depth as a still white, with a fresher finish.

Which rice is best?

Carnaroli holds its shape and makes the creamiest risotto. Arborio is easier to find and works well.

Can I make it ahead?

Not really. Get to the toasting stage up to an hour ahead, then finish it when everyone sits down.

What should I drink with it?

The rest of the bottle. Lemon and Parmigiano are made for a cold glass of Bella Principessa Gold.

Please enjoy responsibly: 21+ only, and plan a safe way home.
