For a midnight toast, buy one 750 mL bottle of Prosecco for every six guests. That’s a 4-ounce pour each. If you’re serving Prosecco all evening, plan about four glasses per guest who drinks it, including the toast, which works out to four bottles for every five guests. Then buy one spare.
At 11:58 p.m., nobody is tasting the wine. They’re looking for their glass. A good New Year’s Eve is mostly logistics, so here they are.
Midnight planner
How many bottles do you need?
Set your guests. The bottles add up as you go.
Toast: one 4-ounce pour per guest. All evening: four 5-ounce glasses per guest, including the toast. Count the guests who want Prosecco, not everyone on the invitation.
How many bottles of Prosecco for New Year’s Eve?
| Guests drinking Prosecco | Midnight toast only | Prosecco all evening |
|---|---|---|
| 10 | 2 bottles | 8 bottles |
| 20 | 4 bottles | 16 bottles |
| 30 | 5 bottles | 24 bottles |
| 50 | 9 bottles | 40 bottles |
The toast column assumes a 4-ounce pour, six per bottle. The all-evening column assumes 5-ounce glasses, five per bottle, and four glasses per guest over the night. Count the guests who want Prosecco, not everyone on the invitation, and add a spare or two. For your own numbers, use our drinks calculator or see how many bottles of Prosecco per guest.
Prosecco or Champagne at midnight?
Both make a proper toast. Prosecco usually costs less per bottle, which matters when you’re pouring for twenty. For every difference, read Prosecco vs Champagne.
Prosecco
- From
- Northeast Italy
- Bubbles
- Made in a pressurized tank
- Tastes
- Fresh and fruity: green apple, pear
- Price
- Usually less per bottle
Champagne
- From
- Champagne, France
- Bubbles
- Second fermentation in each bottle
- Tastes
- Toasty, bready
- Price
- Usually more per bottle
Choose Brut for the toast. On the label, “Extra Dry” is actually the sweeter style. Read the Brut Truth.
Timing the toast
- Take the bottles out of the fridge and into a bucket of ice and water. The ice keeps them at 43 to 46°F while people mingle.
- Open the bottles and pour the flutes onto trays. A third full is plenty for a toast.
- Hand out the glasses, with alcohol-free options on the same tray.
- Say what you want to say now. Nobody hears a toast over “three, two, one.”
- Glasses up. Happy New Year.
How to open Prosecco safely
The American Academy of Ophthalmology’s advice:
- Chill it. Get the bottle to 45°F or colder. A warm cork is more likely to pop unexpectedly.
- Don’t shake it.
- Point it away from yourself and everyone else, at a 45-degree angle.
- Keep your palm on the cork while you remove the wire cage.
- Cover the cork with a towel, hold the cork, and slowly twist the bottle, not the cork, until the pressure eases it out.
If a cork does hit someone in the eye, get medical care right away from an eye doctor or urgent care, and don’t try to treat it at home.
Midnight cocktails
- French 75 with Prosecco: gin, lemon and sugar, topped with bubbles. The grown-up choice.
- Bellini and its strawberry cousin, the Rossini: purée in the flute, Prosecco on top, easy to make by the tray.
- Poinsettia: cranberry and orange liqueur, if the party is still in a holiday mood.
- More in our Christmas Prosecco cocktails list.
Leftover bubbles? Seal the bottle with a sparkling-wine stopper and make mimosas on New Year’s Day.
Everyone gets home
Every holiday season the National Highway Traffic Safety Administration runs its “Drive Sober or Get Pulled Over” campaign, with extra police enforcement from December 16, 2026 to January 1, 2027. Before the party starts, make sure every guest has a plan: a designated driver, a rideshare, a taxi, public transit or your sofa. Serve food all night, put water on every table, and stop pouring well before the end of the party. Guests must be 21 or over.
A bottle worth the countdown
Bella Principessa Prosecco DOC is Brut, crisp, with green apple and pear. Its ceramic-painted bottle has no paper label, so it looks good on a tray of flutes and in every photo taken at midnight. For a pink toast, there’s Bella Principessa Prosecco DOC Rosé. Both are in stores in Florida now; see where to buy.
For the rest of the season, see Prosecco for the holidays. Happy New Year from all of us at Prosecco.com.
