How the smooth-talking bartender at The Savoy in Florence, Italy makes a Rossini.
And how we make ours in America.
Strawberries bring the sweetness.
We bring the restraint.
1. Wash 6–8 ripe strawberries.
2. Remove the stems.
3. Blend until completely smooth.
4. Strain. Always strain.
5. Spoon the purée into a chilled flute, one third full.
6. Top slowly with chilled Bella Principessa Brut DOC Rosé.
7. Serve immediately. No syrup. No shortcuts.
Sweet from the fruit.
Clean on the finish.
From Italy to your glass.
This is the Bella Principessa Rossini.
