Raspberry Prosecco punch is a big-batch party drink: chilled lemonade, raspberry liqueur and fresh raspberries in a punch bowl, topped with a bottle of Prosecco Brut just before guests arrive. It serves 10 to 12 and takes five minutes.
The trick is timing. Everything waits in the fridge; the Prosecco goes in last.
The recipe (10 to 12 servings)
- 1 bottle (750 mL) Prosecco Brut, well chilled
- 2 cups (16 oz) lemonade, chilled
- ½ cup (4 oz) raspberry liqueur, such as Chambord (or vodka for a less sweet punch)
- 1½ cups fresh raspberries
- 1 lemon, thinly sliced
- A few sprigs of mint
- Ice, ideally one large block or ring
Method
- Put the ice, raspberries and lemon slices in a punch bowl or large pitcher.
- Pour in the lemonade and raspberry liqueur and stir.
- Just before serving, add the Prosecco and stir once, gently.
- Ladle into glasses with a few raspberries each. Garnish with mint.
A single large block of ice melts more slowly than cubes, so the punch stays cold without turning watery. Freeze water in a loaf pan or bundt pan the day before.
Which Prosecco?
Brut, because lemonade and raspberry liqueur already bring plenty of sweetness. For a deeper pink, use Bella Principessa Prosecco DOC Rosé, whose Pinot Noir adds red-berry notes of its own.
How much to make
One batch gives about eleven 4 oz servings. For a party where guests have two or three glasses, plan one batch for every four or five guests, and keep a second bottle of Prosecco cold to refresh the bowl. Our drinks calculator does the math.
Alcohol-free version
Skip the liqueur and replace the Prosecco with chilled sparkling water or an alcohol-free sparkling wine. Add a splash of raspberry syrup if you want it sweeter.
